2021 Vintage Update
After the heavy rains mid-harvest, the weather played along nicely for the remainder of the season allowing our red Bordeaux varietals optimal conditions to gain flavour and phenolic ripeness. The cool evenings and warms days made for great analysis and very little meddling needed to be done in the cellar. The reds are busy being racked to barrel and white wine tanks being topped after finishing with fermentation to ensure they remain healthy and retain as much flavour as possible. April is also the time we start assembling our first blends for bottling and the 7even Sauvignon Blanc and Rosé are first in line for the 2021 vintage. The wines are showing beautiful aromatics with taut acidities at this stage and I am excited about what the vintage promises to deliver.

Pungency and aromatic concentration are the hallmarks of a fine Sauvignon Blanc and there is no shortage of these characteristics on the southern slopes of our Bottelary Hills vineyards. Grapes were picked at various stages of ripening to provide us a broader spectrum of flavours to work with at blending. A small percentage of Semillon was used as a blending partner that adds weight to the palate. This is a complex wine that delivers a beautiful expression of our pristine terroir that continues to develop over 2 to 3 years.
