In The Vineyard
The Pinotage vineyards on the lower lying slopes of the Kuils River Hills, are our earliest ripening grapes. The vines are trellised on a 5-wire hedge system with vertically positioned shoots with 2 bud spur pruning allowing for 16 bearers per running metre.
About The Harvest
Early in February we hand harvest the intensely flavoured and impressively pigmented bunches, taking them directly to specialized red wine fermentors for an overnight â€˜cold-soakâ€™
In The Cellar
This allows for amazing colour extraction early on in the winemaking process. Fermentation takes place over 6 days with temperatures peaking at 28.5 0 C. We keep the skins in contact with the wine for a further 6 days to enhance tannin and structural extraction, making for a dense wine of great substance. After completion of malolactic fermentation the wine is transferred to second and third fill French Oak barrels where it lies quietly maturing for 9 months.
