In The Vineyard
These 25 year old vineyards, present a visual anomaly. Gnarled and far from aesthetic, they produce the tiniest berries with astonishing aromatic concentration.
South-west facing with one of the most extreme slopes on the farm, the wines enjoy the wintry exhalation of the Atlantic Ocean less than a stoneâ€™s throw away in viticultural terms.
The decomposed granite soils include desirable clay elements that retain moisture during the drier months of ripening, yet, as a result of the prominent gravel fractions, allow for excellent drainage.
About The Harvest
Lessons learned in the past seven vintages since 2002 paved the way for a move towards fruit retention and expression. Rigorous hand selection took place of only the pink/purple bunches, in the early hours of a Saturday morning, in 2009
In The Cellar
The grapes were crushed and de-stemmed, moving away from, whole bunch pressing, allowing for higher quality juice with superb aromatic potential. After settling we racked the wine to third and fourth fill French oak Hogsheads (300 litre), where natural fermentation took place.
We stirred the lees in barrel every week for 4 months before we racked the wine to stainless steel. The wine was left on the lees for another month.
Bottling took place without filtration. A sediment may result over time. Careful decanting will allow for a clear drink and the most advantageous expression of this aromatic wine. 1200 bottles have been produced.
